Ingredients - 500g ricotta cheese, 1 egg, 100g grated Parmesan cheese, 1 cup plain flour (plus extra for dusting), salt, pepper, ground pimento (allspice)
Mix all the ingredients together well in a bowl to make a slightly sticky dough.
Dust the bench with flour. Take about a quarter of the dough, and with floured hands, roll the dough into a long sausage approximately 2cm wide.
With a knife or pastry scraper, cut the sausage into pillows approximately 2cm long.
Toss pillows in a little extra flour and place in a container so that they are not touching each other. Repeat rolling dough in batches until all the dough has been rolled and cut into pillows.
Place the container of pillows in the fridge for 15 mins.
Bring a large pot of water to a rolling boil. Add pillows to boiling water. Stir gently to make sure they don't stick to the bottom & cook for 2-3 minutes until they float to the top of the water.
When cooked, strain & add your favourite pasta sauce. Suggestions: Try butter with basil & black pepper; Try burnt butter with sage & goats cheese; Try sausage, broccoli & beans (also on snapguide).
